Orange, Avocado & Pomegranate Salad

ImageWe’re in the midst a heatwave in Melbourne this week and it’s all anyone can talk about. The temperature has topped more than 40°C consecutively for four days (that’s more than 100°F for my northern hemisphere peeps) and everyone is losing their tiny minds over it! People are hot, sweaty and cranky but I have a delicious recipe for a yummy salad that may turn those frowns upside down.

I’ve been inspired to make more salads for lunch by Anna over at Colour Me Anna and her #jansaladaday eating challenge on Instagram and I think I’ve hit the jackpot with this one! It’s only a handful of ingredients but it’s super tasty and easy to make. Perfect to eat in this weather we’ve been having. I think the secret to it is the feta. Feta truly makes everything taste 100% better.

Orange, Avocado & Pomegranate Salad

 

Ingredients:

  • 2 big handfuls of baby spinach
  • half an avocado, sliced
  • 1 orange, segmented
  • a handful of pomegranate seeds
  • 20g feta

For the dressing

  • splash olive oil
  • tsp Dijon mustard
  • half a lime, juiced
  • salt & pepper
